BIWEEKLY share of raw, fermented sauerkraut made right here in the Puget Sound. OlyKraut is a small artisan company, which has been rooted in Olympia since 2008. They use all organically produced ingredients and source locally as much as possible.
All of their fermented vegetables are delicious straight out of the jar, in salads, on sandwiches, or mixed in with cooked vegetables, beans, and grains. Some favorite combinations include Fire Chi & peanut butter sandwiches, baked potatoes with Curry Kraut and avocado & Spicy Garlic with tahini on toast, and the old standard, sausage with kraut.
OlyKraut lasts 6 months in the fridge, so you can store it for the winter. OlyKraut makes many different flavors, including the following, but expect to see seasonal flavors as well.
Original Sauerkraut Contains just green cabbage, sea salt, and Celtic Sea Salt and is a tried and true favorite with all the delicious goodness and familiarity of traditional sauerkraut with the added crunch and kick of being raw and unpasteurized.
Eastern European Contains green cabbage, onion, apple, carrot, caraway seeds, grapefruit juice, sea salt, and Celtic Sea Salt. This one is delicious and nearly as versatile as the original. The caraway seeds and apple give it a distinct flavor that has made it one of our most popular flavors.
Curry Kraut Contains green cabbage, onion, carrot, ginger, garlic, sea salt, chile flakes, curry powder, and Celtic Sea Salt. It is unique and delicious with a turmeric, cumin, coriander-based curry flavor. Turmeric is liver-protective and creates a bright yellow color. This kraut is great with cooked vegetables, potatoes, avocados, and even on buttered toast.
Spicy Garlic Contains green cabbage, onion, carrot, garlic, daikon, ginger, dried chile flakes, sea salt, and Celtic Sea Salt. This flavor combination utilizes the immune-boosting spices of garlic, ginger, and chiles. We use shredded green cabbage and mild chiles so that it can be enjoyed by a broader selection of palettes.
Spring Nettle Kraut Contains green cabbage, onion, garlic, jalapeño, fresh nettles, sea salt, and Celtic Sea Salt. This is a seasonal product due to the availability of nettles, but when it is available it is our best seller. It is such an excellent combination of flavors and the green nettles are amazing as food and medicine.
Cumin-Jalapeño Contains yellow onions, green cabbage, fresh oregano, carrots, jalapeño, sea salt, and Celtic Sea Salt. This is our most recent seasonal concoction created to celebrate the bountiful onion harvest of the fall. The combination of thyme and pepper with the fermented onions is sweet and savory and truly delectable. It is an excellent stand alone salad as well as a superb condiment.
Sea Vegetable Sauerkraut Contains green cabbage, onion, garlic, jalapeño, sea salt, seaweed, and Celtic Sea Salt. This flavor combines the unique thyroid supporting attributes of seaweed with the delicious splash of spiciness. This popular seasonal blend is available in the fall and winter.
